Conducted by the “master of hojicha” who leads the hojicha program in the Japanese Tea (Nihoncha) Instructor Association 👨🏻‍🏫

To produce hojicha, roasting temperature of the “raw” green tea leaves needs to be controlled around 160-180°C with 0% moisture content in the leaves at the end of the process (sencha requires 2% moisture). The higher the leaves quality (1st flush wink wink 🤩), the lower the roasting temp. to retain original tea notes 🫖

There are 2 roasting methods- SAND and DIRECT 🔥roasting. Sand roasting is the traditional method that requires more skill, and so very few hoji factory uses this method. While direct roasting is more economical, sand roasting is more “gentle” to the tea leaves as it heats tea up from within so more of the original tasting notes are kept during the process 😋

And guess what, our hojicha loose leaf and amber hojicha powder are both roasted at a lower temp using sand roasting by the hojicha master who runs this factory!
