Easy-Peasy Matcha Mochi
Tea and Mochi lovers, your dream has come true! This is a 20min dummy proof recipe for you to make delicious tea infused mocha at home. You don’t even need any fancy baking tools or equipment. It’s THAT simple! These chewy flavourful pieces are also gluten free and vegan friendly!
We recommend enjoying the mochi with a tea-infused dip as well to elevate the whole experience. Check out the recipe here for the dip.

Equipment

  • bowl
  • whisk
  • spatula

Ingredients
  

  • 0.5 cups water
  • 2 tbsp vegetable oil
  • 4 tbsp sugar
  • 2.5 tbsp corn starch
  • 7 tbsp glutinous rice flour
  • 3 tsp stone-milled tea powder of your choice

Instructions
 

  • Add all listed ingredients for the Mochi Dough into a bowl
  • Mix well with a baking whisk until there are no lumps
  • Steam the mixture in the bowl for 15-20min or microwave for a total of 2-3min (Cooking time varies based on power of stove/ microwave; it’s recommended to check by putting a fork into the middle of the dough at 15min mark in steamer or 2min in microwave; If dough is too moist, add 1 min at a time if steaming or 15 sec at a time if microwave)
  • While you are waiting for it to heat up, you can begin making the mochi dip (see Mochi Dip recipe)
  • Once the dough is cooked, use a spatula to scrape and fold the edge of the cooked batter into the middle
  • Put a layer of food wrap on to the surface of the batter; directly touching it so there's no air
  • Place it inside the fridge to cool it down
  • Before placing the cooled mochi dough on top of the cutting board, wrap the cutting board with food wrap and use a generous amount of corn starch on your hands and cutting board to prevent the dough from sticking
  • Roll the mochi into a log shape and cut it into bite size pieces
  • Shape the mochi pieces into balls, drizzle with chilled mochi dip, and enjoy!

Notes

Useful Tips
  • Overcooked dough becomes dry and loses chewiness, so do check the middle of the dough after 15min in the steamer or 2min in the microwave
