Shincha is a type of Japanese green tea that is harvested from the first flush of new tea leaves in the spring. The word “Shincha” literally means “new tea” in Japanese, and it is highly prized for its fresh, delicate flavor and aroma, as well as rarity – only available for a short time each year.
Harvested from the first flush of tender green leaves in early spring, Shincha boasts a fresh and delicate flavor, as well as high levels of amino acids and other nutrients that is unmatched by any other green tea. With a rich aroma and a smooth and velvety texture, this tea is the embodiment of Japan’s natural beauty and rich cultural heritage.
This batch of Shincha was selected by our recent Japanese tea trip to the tea plantations and annual tea auction at one of the largest tea producing regions in Japan – Shizuoka. It is full-bodied and full of unami note – the “fifth taste”, a Japanese term that translates to “pleasant savory taste” and often reminds people of taste of seaweed/ ocean.
ORIGIN | SHIZUOKA, JAPAN
Shincha Brewing Guide (1 HOT Serving):
- 3g of Shincha
- 120ml of Water at 60-70*C
- Steep for 60-90 seconds
- Second Infusion: 120ml water at 90*C for 15 seconds
Shincha Cold Brew Guide (1 COLD Serving):
- 10g of Shincha
- 150ml of Filtered Water at room temperature + 75g Ice
- Steep for 1 hour at room temperature
- Second Infusion after cold brew is possible as a hot tea: 120ml water at 90*C for 15 seconds
P.S. Cold Brew Shincha is good as is without ice for maximum umami and sweetness. If you prefer a more refreshing (lighter body) cold brew, add a few ice cubes.
STORAGE | Fold and clip the opened bag properly to minimize contact with air; Keep it away from any sources of light in cool, dry environment; Store in fridge is highly recommended
